I had in mind to make something special for my home today but arrived the market too late to buy good stuffs for my intended meal so I made a last minute decision on what to cook.
I'm not sure what the actual name of this rice is. Whether it is "Concoction Rice", "MTN Rice" or "Native Rice", I really do not know.
Many versions of this meal make use of pumpkin as the vegetable but today I went for parsley and that alone raised the flavour profile of this delicious rice.
