Rainy Day Delight

 Finally the rains are here!!!

Am I the only person enjoying the beautiful cold that comes with a rainy day? Maybe I'm this excited because of the bowl of hot pepper soup this weather deserves. Oh, and I made this with the leftovers of my fresh fish.

So to the clean fish, add some shrimps, crabs, snails, onions, blended fresh pepper, maggi, salt and dry pepper. You can skip the dry pepper if you choose but what is pepper soup without enough pepper😂

Steam this in a pot on low heat and please do not add water yet. You want your sea food to to release it's juice and enhance the flavour of the soup but adding water immediately will ruin that goodness. After a while you will notice your pot has some liquid created by the moisture of the content and the steam, add some water now and allow to boil. Stir lightly with a wooden spoon or preferably shake the pot gently to leave the fish intact.

As the pot begins to boil and foam you can add some more seasoning to taste or a little ground crayfish if desired. Roughly Chop some fresh okra and onions and add to the pot before taking off the heat. The heat of the pot without the fire is what cooks the okra, that way okra's invaluable nutrients are not lost to high heat.
