Certainly, I'm not the only person who has desired suya for breakfast. My only concern has been eating Suya alone wouldn't count as balanced diet and a good breakfast should contain components with rich nutrient profile.
Suya Bread emerged from this concern. It's a chic way of having Suya for breakfast alongside eggs, vegetables and bread.
Ingredients
For 12slices of bread you will need
5 medium size eggs
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/8 teaspoon of Maggi
1/2 teaspoon of ginger powder
1/4 teaspoon of grated garlic
1/4 cup of diced onions
1/2 cup of diced suya
1/2 of mixed vegetables diced ( I used carrots, peas and sweet corn)
6 slices of cheddar cheese cut all in half
Method
Carve out a round hole in the center of the bread slices. Keep the holes aside.
In a bowl, lightly whisk the eggs together with salt, pepper, maggi, ginger and garlic and set aside.
On low heat, lightly grease a frying pan and place a slice of bread. Once the bread is hot, add a spoon of the egg mixture in the center, then add a spoon of veggies, a spoon of onions, a spoon of suya, half slice of cheese and cover with the bread hole you kept aside. Allow to fry a bit then turn upside down for the other side to fry as well.
Keep your heat low so as not to burn the bread.
Repeat for the remaining slices of bread.
In the absence of cheese, you can brush the bread hole with egg before covering the center with it.
Once cool, cut the bread in half using a knife, drizzle some ketchup and enjoy with a cup of tea.
You deserve some suya bread :)

Finally found someone who also thinks suya could make for a great breakfast. 😀 I have eggs, meat and veggies, should I goan buy bread, cheese and ketchup or I should face my salad 🥗 in peace?
